Spinach Tortillas

1.5 cups of chickpea flour
½ cup of Arrowroot flour
2 cups of spinach
1 ½ cups of water
Sea salt + pepper

 

HOW TO.
Process all ingredients in a blender until smooth. Add a little more water if you would like them thinner. Place in fridge for half an hour to thicken up. Heat a non stick pan on medium heat (a non stick pan is VITAL for this type of cooking!- the amount of times I have had pan that stick with pancakes, not good!) Pour half a cup of mixture in the pan and swirl to coat the base....

1 cup of raw cashews (activated if possible)
2 tablespoon of chia seeds
1 cup of buckwheat kernels
1 cup of coconut flakes 
1 tablespoon of rice malt syrup 
1 teaspoon of vanilla bean powder or paste
1 tablespoon of melted coconut oil

½ head of a cauliflower pulsed (or cauliflower rice)

Sea salt and pepper

1 tablespoon of psyllium husk

1 chia egg (1 tablespoon of chia and 2 tablespoons of water)

1 garlic clove finally chopped

2 teaspoons of dried herbs (Italian herbs, dill ,basil, oregano)

1 tablespoon of olive oil

Warm water for consistency

1 tablespoon of nutritional yeast

½ cup of buckwheat flour

 

TOPPING:

¼ cup of pickled artichoke, drain and sliced

8 olives pitted and sliced

1 cup of roasted pumpkin

1 tablespoon of organic tomato paste

½ zucchini ribboned or peeled long ways
