Crunchy vanilla + cashew granola

Crunchy Cashew + Vanilla Granola  (GF, DF, Paleo) 

1 cup of raw cashews (activated if possible)
2 tablespoon of chia seeds
1 cup of buckwheat kernels
1 cup of coconut flakes 
1 tablespoon of rice malt syrup 
1 teaspoon of vanilla bean powder or paste
1 tablespoon of melted coconut oil 

HOW TO.

Add the rice malt, melted coconut oil and vanilla bean into a small mixing bowl. Stir to combine. 
Add the cashews, chia seeds and buckwheat in a bowl and pour over the liquid mixture. Stir to combine to ensure all cashews are evenly coated 
Add to a preheated oven at 180 degrees for 7-8 minutes just until the cashews start to brown and rice malt is bubbling, set aside to cool 
While the nut mix is cooking heat a non stick fry pan on medium-high heat. Add the coconut flakes and toast until golden brown.
When the granola is cool, break into pieces and add the coconut flakes in. 
Store in a jar. Use as a topper for chia pudding, Cocobella coconut yoghurt or anything to make it extra delicious!
